I love raspberry lemonade, but other recipes call for whole raspberries which make the lemonade difficult to drink.  Or they include seeds, which can cause health concerns for some or problems with dental work.  Taking the seeds out can be messy and tedious.  The beauty of this recipe is that it's easy, elegant, delicious - and never includes the seeds in the first place.


Seedless Raspberry Lemonade Recipe


1 12-oz. jar seedless raspberry jam

1 12-oz. can frozen lemonade concentrate

1 1/2 liters club soda
 

In the jar of a blender, place the jam and lemonade concentrate.  Whirl until the mixture is smooth, less than a minute.

Pour the mixture into a pitcher with a minimum 64 oz. capacity.

Pour in about 1 cup of the club soda and stir well.  Add the remaining club soda very slowing and stir gently to combine.

Serve immediately.

Makes 16 punch cup servings, 8 8-oz. servings, or, if served over ice, fills these sophisticated cobalt blue glass tumblers 6 times.
