This fruit salad combines the convenience of prepared fruit with the crisp and lively flavor of fresh fruit to create a delicious, colorful fruit salad that won't take all day long to prepare.

Fruit Salad Recipe

2 large granny Smith apples, cored, sliced, and then cut into bite-sized pieces (peeled or unpeeled as you prefer)
2 15-oz. cans of pineapple chunks or 1 fresh pineapple, cut into chunks (purchase already cored to save time), drained
2 small cans Mandarin oranges, drained
1 large jar maraschino cherries, no stems, drained
1 pound seedless red grapes, washed and sliced into halves
2 kiwi fruits
2 or 3 bananas, depending on size
1 cup chopped pecans (optional)
1/2 cup flaked coconut (optional)

Up to several hours before serving, place the prepared apple pieces in a large mixing bowl.  Add the drained pineapple and stir to coat the apples so that the acid from the pineapple can help keep the apples from turning dark.

Add the oranges, cherries, and grapes.  Refrigerate.

Just before serving, peel the kiwi.  Slice, and then cut each slice in half.  Add to the salad.  Slice the bananas, add to the bowl, and stir.

Either add coconut and pecans or place in bowls to pass separately.

Carefully transfer the fruit salad into a serving bowl and serve immediately.

Note:  The fruit salad is still delicious on the second day, but the kiwi will have lost some of its tang and the bananas will have lost firmness.
